Home Cooking – Chocolate Bread & Butter Pudding

Who does not crave a gooey and dark chocolatey bread and butter pudding after catching a glimpse of this Bread Pudding and Chocolate Beer Sauce from Jamie Oliver’s latest book, Jamie’s America? Seeing this recipe reminded me of the awesome and so very decadent Choc B&B pudding by Tim and another recipe which I spotted a while ago which I had my heart set on to try sometime. I decided to take this dessert up to my beach trip even though it is hot, I doubt people will refuse chocolatey goodness ^^! My version of the chocolate bread and butter pudding was inspired by Jaime’s and Karen’s recipes and a lot of winging it as I went so check out their recipes for the ingredients and more detailed methods (sorry I forgot how much I used haha).
Here Comes the Food

Pupu cutting the bread into triangles; look at my speedy whisk action
As with all bread and butter puddings, you need to prepare it a day or two ahead of the intended consumption time to allow every single bit of bread to soak up all the chocolatey goodness. In a large bowl mix in the cocoa powder and sugar with the eggs and whisk until smooth and silky.

Butter milk! How very appropriate!
I think people normally cut off the crusts but I decided to leave them on (because of sheer laziness or a genius plan of adding some extra textures to the pudding, I don’t know which). Line the triangles up so they sightly overlap and then poke the chocolate melts in between slices of bread and scatter around.

Mmmmm creammmm; make sure you get every last bit of that precious precious cream
Whisk in the cream and milk until you get a lovely and smooth mixture.

Now pour half of that creamy mixture ensuring that all of the bread triangles get a good smothering.

Do a second layer of bread, poke chocolate all throughout and pour on the remaining mixture. Cling wrap it up and then refrigerate for a good 24 hours (at least) to allow the infusion of chocolate into bread.

Ta-Da!
Baking the pudding will require about 30-35mins at 180 degrees C. This should result in a beautifully gooey and marshmallowy center and a slightly crusty top. In this version you don’t really have a chocolatey burst until you bite into the chunks of melted chocolate but it is a good balance between the creamy bread and the intensity if the chocolate. I did find that the raisins tended to contrast quite sourly against the rest of the pudding so the next time I try this I would go for plain white bread. As I mentioned before I like leaving the crust on for a denser texture in some bites.

Serve hot with a nice scoop of ice cream mmmmmm
Chocolate bread and butter puddings are a gift from heaven and perfect for any weather in my opinion. I shall have to try the chocolate beer sauce in Jamie’s version next time!
