The Crackling – no pork and no bacon make me something something…

The party bag from the Yuletide dinner at Atelier left us all giddy with excitement as we compared the sizes of each other ‘racks’ but thoughts soon turned quickly into possible creative and crackling ideas to apply to our badboys. Especially since Mel had presented us with an invention test regarding our racks. After racking my brain I decided to rely on the simple recipe I tried only just a few days earlier of rosemary pork crackling but I added a twist. How does one improve on an already beautiful and tender rack of moisture-infused pork? By adding more of the magicaaall animal, of course and this meant the one and only BACON ^^!

The recipe is basically from NQN, but with the all important extra bacon which I added (with a few sprigs of rosemary) under the skin of the pork rack.

Making of the apple sauce but I used honey instead of maple syrup

After a long and impatient wait and having to smell the roasty aromas seeping out of the oven the rack is ready ^^!

The pork was amazinnnggg! My previous roast was cooked exactly the same way, minus the bacon, but it was immediately how obvious that this one was more moist and juicy because of the moisture-infusion. The bacon slices added a different dimension as they were slightly saltier and had a different texture than the pork rack but bacon on pork is definitely something I would do again hee hee. The soft and sweet apple sauce also marries well with the rosemaryed pork mmm and having a side of vegetables always makes the dish seem more healthier haha. Finally, the crackling… pure bliss with each bite! I did a n00b mistake of accidentally squirting lemon juice on it before I roasted but most of the crackling still turned out with a beautiful ‘crackle’ that is music to the ears. I could had baked it separately to make it even cracklier but I could not stop myself from digging into the meal nom nom nom, and with that I shall stopand get a snack as I am getting hungry…

Ohmigod, the only thing that could make pork crackling better is bacon!! Ahaha at the ‘magicaaall animal’, does pork and bacon make you think of what homer says in that simpsons episode too? It always does for me!
