Momofuku Milk Bar’s Crack Pie
The sensationalised scripted dialogue of Matt Preston in last Sunday’s MasterChef when he dropped Aaron’s pasta dish to the floor in my mind perfectly describes this recipe: ‘It’s disgustingly good!’
The recipe is an appropriation on Chess Pie, a play on old-school and new-school with the main commonality of using ingredients that are readily available in your own pantry. When all the whipping, bags of sugar and blocks of butter are finally pieced together amongst other ingredients, the result is a pie that is molten gooey in the centre with the texture of a silken tofu and a rich buttery crust that encases it.
